To pierce the top of a dough (as for bread and pizza crust) to keep it from rising erratically because of escaping steam. For the top of bread loaves, docking implements may include a knife, scissors or razor blade. For pizza doughs, crackers and the like, there's a special tool called a dough docker, which resembles a handle attached to a short rolling pin fitted with short, stubby spikes that pierce the dough.
