Glossary: Galia melon
Hailing originally from Costa Rica, the Galia melon is now grown in many locales including Chile, Panama, Israel and the United States (California and most southern states). The rind of a Galia resembles a cantaloupe with a slightly more golden netting on a background of green. The flesh is pale green in color, very much like that of a honeydew melon, and the flavor is very sweet. This melon is available from May through September and again in November and December. It's typically picked ripe and should be consumed shortly after purchase. Cut melon should be wrapped in plastic wrap and refrigerated for no more than 2 days. See also melon.
