Glossary: imitation cheese

Essentially a processed cheese with the butterfat replaced by nonfat milk, vegetable oil or whey solids mixed with water. Such products typically have a rubbery texture and lackluster flavor. Looking for a plus side? They have a long shelf life and often require no refrigeration. See also substitute cheese.
