Made in Lancashire, England, this pale-yellow cow's-milk cheese can range from semihard to hard depending on how long it's aged. When young, the flavor is mild yet tangy. It becomes stronger and richer in flavor as it matures. Lancashire, with its delicate, soft and crumbly texture, melts beautifully and is a favorite cheese for welsh rabbit. See also cheese.
