Also known as frog skin melon, this fruit is named for the medium and dark green mottling on the skin. The sweet flesh ranges in color from off-white to celadon green. Choose a melon that's heavy for its size. Underripe melons will ripen at room temperature. Wrap ripe melons in a plastic bag and refrigerate up to 5 days. See also melon.
