This is fantastic simple ravioli from the southern islands of Italy. The very fluffy dough with the simple sauce makes for a delicious Italian meal.

Ingredients

Ravioli Dough
  • 2 1/2 cup all purpose flour
  • 1 cup water, boiling hot
Ravioli Filling
  • 2 hot italian sausage, chopped and cooked
  • 3/4 cup ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 3 tbsp fresh basil, diced
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 1 eggs
Sauce
  • 3 tbsp olive oil
  • 2 tsp lemon zest
  • 2 tbsp fresh basil, chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Recipe Method

1- In a medium bowl, combine flour and water and mix with a wooden spoon until the two combine into a ball. Be sure to measure the flour and water exactly or you won;t get the right consistency. Once the dough is formed, set it aside for ten minutes to rest so it will be easier to roll.

2- While the dough is resting, make the filling. In a medium bowl, combine the ricotta cheese, parmesan cheese, Italian sausage, chopped basil, egg and salt a pepper. Mix all the ingredients together until well combined.

3- Once the dough has rested for ten minutes, roll it out on a lightly floured board until it's about 1/8" thick. To form the ravioli, scoop about a teaspoon of filling onto the dough. Fold the dough over the filling and use a cookie cutter or knife to cut out the ravioli. Repeat the process until the dough and filling run out.

4- When you are ready to cook the ravioli, bowl a large pot of salted water and drop in the ravioli. Cook for about 2-3 minutes until the ravioli float to the top of the pot.

5- While the ravioli is cooking, combine the olive oil, lemon zest, salt, pepper and basil in a medium bowl. Remove the cooked ravioli from the water and place into the bowl with the sauce. Lightly toss the ravioli in the sauce mix. The heat of the ravioli will heat the olive oil and make a delicious light sauce.

Serve the Ravioli immediately with your favorite sides. Enjoy!
