This is a delicious twist on the original. A fantastic side to add to any barbecue meal. Feel free to add or subtract the chili powder to accommodate your taste.
Preheat oven to 400F.
1- Place the chili powder, salt, pepper, cumin and cinnamon in a large bowl and whisk to mix.
2- Scrub the sweet potatoes under cold running water and then dry them with paper towels. Cut the potatoes into 1/2" slices and brush them with olive oil. Add the sweet potatoes to the bowl of spiced and coat the potatoes evenly.
3- Spread the potatoes across a baking sheet sprayed with cooking spray.
4- Bake the sweet potatoes for about 45-60 minutes until they are golden brown. Test doneness with a skewer. They should be soft all the way through each piece.
5- When done, transfer the potatoes onto plates and let cool for a few minutes before you eat them.
