This delicious staple can be used with almost anything to add live to it. There are many different versions but here is a simple method that really focussed on the flavour of the chilies.
1. Preheat the broiler.
2. Broil the garlic cloves until they are lightly browned and tender, about 2-3 minutes per side.
3. Scrape any blackened skin off the garlic. Place the garlic, chili strips, cilantro, lime juice, cumin, oregano, and 4 tablespoons of water in a blender and puree until smooth. Make sure you scrape down the sides of the blender with a spatula.
4. Transfer the salsa to a saucepan and bring to a gentle simmer over medium heat. Let the salsa simmer until it becomes thick and flavorful. When it's finished, it should have the consistency of heavy cream. Add water as needed.
5. Taste for seasoning and add lime juice, salt and pepper as needed. This salsa should be heavenly seasoned.
