This recipe is deceptively simple. The smoky grill flavor adds a terrific dimension to the velvety rich beans and the creamy cheese.
1- Start your grill (If you don’t have a grill you could also make these quesadillas on a
Reserve ½ cup of salsa for serving.
2- Combine the beans and ½ cup of the salsa in a food processor. Taste test and season with salt.
3- Spray one side of each tortilla with nonstick cooking spray. Place the coated sides down and spread half the bean and salsa mix on each one. Top each with half the
4- Grill each quesadilla until the cheese melts and the tortilla is lightly toasted, then flip and cook until the other side starts to crisp up.
5- Cut quesadillas into wedges, sprinkle with cilantro and serve with salsa. They're great served with some cilantro brown rice and grilled corn on the cob.
