Granny's Oatmeal Cake

Everyone wants this recipe when I make it.

Very moist cake - I like it best when the frosting is broiled.

Ingredients

Cake
  • 1 1/2 cup water, boiling
  • 1 cup quick cooking rolled oats
  • 1/2 cup unsalted butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 1/2 cup all purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
Frosting
  • 6 tbsp unsalted butter
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans
  • 1 cup dried shredded coconut

Recipe Method

For Cake:

1- Preheat oven to 350'

2- In a medium bowl, add oats to boiling water - set aside.

3- Melt 1 stick butter in large mixing bowl. Add both sugars-mix well.

4- Beat in both eggs. Add oats slowly.

5- Add dry ingredients.

6- Bake in buttered 13x9 pan for 25 to 30 minutes.

For Frosting:

1- Melt butter in a saucepan over medium heat, add sugars & milk. Mix & boil for 3 minutes (stirring constantly).

2- Remove from heat & add vanilla. Add nuts & coconut.

3- Frost cake & place in broiler for 2 minutes. Watch carefully - broiler can burn quickly.
