An easy dessert that can be topped with fresh berries, whipped cream, or simple powdered sugar.
1- Preheat oven to 375F.
2- Butter an 8 inch round pan and line with parchment paper. Butter the paper as well.
3- Chop the chocolate into small pieces and melt in a double boiler (you can always make your own by setting a glass bowl over a pot of simmering water).
4- Mix in butter, and stir until smooth. Remove the bowl of chocolate from heat, and whisk in the sugar. Add eggs and continue to whisk. Add the cocoa powder, and whisk into chocolate mixture gently, until just mixed in.
5- Pour batter into buttered pan, and bake for 25 minutes, until the top has just begun to form a crust.
6- Cool cake pan on a rack for 5 minutes, and then turn out onto a serving dish.
