1. Preheat the oven to 160C. Grease two baking trays and line with baking paper. Place the egg whites in a small, dry bowl. Using electric beaters, beat the egg whites until firm peaks form. Add sugar gradually, beating constantly until the mixture is think and glossy and all the sugar has dissolved.
2. Transfer the mixture to a large bowl and add the coconut. Using a metal spoon, stir until just combined. Drop 1 or 2 level teaspoons of the mixture onto the prepared trays about 3 cm apart. Sprinkle with shredded coconut and bake for 15 -20 minutes, or until golden. Transfer to a wire rack to cool.
