Gingered Sweet Potatoes

The sweet taste mixed with ginger is wonderful! Even my husband who isn't crazy about sweet potatoes, liked this.

Ingredients

  • 8 sweet potato or yams, peeled and sliced 1/4
  • 1 1/2 cup apple juice
  • 2 tbsp brown sugar
  • 4 tsp fresh ginger grated

Recipe Method

1- Heat oven to 425 F.

2- Combine all the ingredients and place in a lightly oiled casserole.

3- Bake uncovered for 30-40 minutes until golden brown and most of the liquid has evaporated.

Goes well with ham.
