1. Crumble the cheese and combine well with the chopped nuts, breadcrumbs and herbs, seasoned well with salt and pepper.
2. Make a horizontal slit in each of the loin chops and place a quarter of the cheese mixture into each. Seal with a wooden toothpick or metal skewer.*
3. Preheat the grill to high, brush the chops very lightly with oil and sprinkle with thyme, then grill for 8 to 10 minutes on each side.
4. Serve with toothpick/skewer carefully removed, sprinkled with fresh thyme and accompanied by seasonal vegetables of your choice.
*TIP: for easy removal of sticks before serving, brush them with oil before using to close the slit.
