Autumn Salad with Red Wine Vinaigrette

Ingredients

  • 2 tbsp oil, olive, extra virgin
  • 2 tbsp vinegar, red wine
  • 1/2 tsp sugar
  • 1/2 tsp garlic, minced, wet
  • 1/4 tsp spice, paprika, ground
  • 1/4 tsp spice, mustard seed, ground
  • .12 tsp salt, table
  • .05 tsp herb, basil, dried
  • .05 tsp pepper, red or cayenne
  • 5 cup salad, field greens
  • 4 cup lettuce, romaine, fresh, chpd
  • 2 1/2 cups asian pear, chopped, 1 pear
  • 2 cups Granny Smith apple, chopped, 1 apple
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup goat cheese, crumbled

Recipe Method

1. Combine first 9 ingredients in a bowl, stirring with a whisk.

2. Combine salad greens, romaine lettuce, Asian pear, apple and red onion in a large bowl. Drizzle with vinaigrette and toss well to coat. Sprinkle with crumbled goat cheese.

Yield: 12 servings (serving size: about 1 cup salad and 1 teaspoon cheese).
