Raspberry and White Chocolate Brownie

The yummiest brownies you'll ever eat!

Moist yummy brownies with the tartness of raspberries and the sweetness of white chocolate mixed in.

Ingredients

  • 150 grams (5.5oz) butter chopped
  • 200 gram (7 oz) dark eating chocolate chopped
  • 1 cup (220g) caster sugar
  • 2 teaspoons vanilla extract
  • 3 eggs beaten lightly
  • 1 cup flour
  • 1/2 tsp baking powder
  • 150 grams (5.5oz) white eating chocolate chopped
  • 150 grams (5.5oz) frozen raspberries

Recipe Method

1. Preheat oven to 350F. Grease a 9" square cake pan.
2. Melt butter and dark chocolate in a medium heatproof bowl over a saucepan of simmering water. When melted take off heat.
3. Stir in the sugar and vanilla, then the eggs, sifted flour, white chocolate and raspberries. (If your mixture is too hot the white chocolate will melt)
4. Spread the mixture in the pan and bake for about 35 minutes or until just firm. Cool in pan.
5. Turn out; cut into squares.
