Recipe Method
1. Preheat broiler.
2. Remove as many bones from shad as possible. Place skin side down, on greased broiler pan.
3. Brush shad with melted butter; sprinkle with salt and pepper. Broil for 20 to 25 minutes, brushing several times on both sides with melted butter.
4. To serve, transfer shad to heated platter; garnish with lemon slices and watercress.
