  • 1/4 cup butter
  • 1 pound cooked smoked haddock flaked
  • 2 cups cooked rice
  • 3 hard-boiled eggs 2 chopped, and 1 sliced
  • salt, pepper, lemon juice to taste
  • 6 slices hot buttered toast

Recipe Method

1. Melt butter in saucepan; add fish and sauté for 2 to 3 minutes.

2. Add rice, chopped eggs, salt, pepper, and lemon juice. Cook over low heat, stirring constantly, until heated thoroughly.

3. To serve, arrange fish mixture on toast; garnish with eggs slices.
