4 cups old/aged cheddar cheese grated, (reserve 1 cup to sprinkle on top of casserole)

Recipe Method
1. Boil
macaroni in salted water in a
large pot,
drain and put back in pot,
set aside.
2. Make a white sauce by melting the butter over med low heat; add flour to make a thick paste. Keeping heat low, slowly whisk in milk and keep stirring to make a white sauce. If it becomes too thick, add a little more milk.
3. When sauce is as thick as you would like it, add mustard, worcestershire sauce and a good sprinkle of fine black pepper, stirring well; add 3 cups of grated cheese and stir until melted.
4. Add sauce to macaroni and stir until all macaroni is well coated; place in oven proof casserole dish and sprinkle 1 cup grated cheese on top; bake in 350 degrees oven for 20 minutes; if you like a little crunch on the top, place under broiler for 5 more minutes; let it set for 5 minutes and enjoy.
