  • 1/4 cup butter
  • 1/2 piece medium onion chopped
  • 1/2 cup celery chopped
  • 1/2 cup green pepper chopped, cut into 1/2-inch dice
  • 1/2 cup red bell pepper cut into 1/2-inch dice
  • 4 ounces mushrooms sliced
  • 1/4 cup flour
  • 1 1/2 cups half and half or homogenized milk
  • 1 tin condensed cream of mushroom soup
  • 3 cups turkey cooked,diced
  • 1/2 tsp oregano
  • 1/4 tsp nutmeg
  • 2 tablespoons worcestershire sauce
  • tsp salt
  • tsp pepper freshly ground

Recipe Method

1. Melt butter in a large saucepan or skillet over medium high heat. When hot, add onion, green and red peppers and mushrooms. Saute, cover and simmer 5 minutes. Remove vegetables with slotted spoon. Add flour to butter, cooking and stirring until smooth. Add gradually half-and-half while whisking or stirring and cream of mushroom soup, stirring until smooth and thickened.

2. Add turkey, oregano, nutmeg and Worcestershire sauce. Season to taste and add vegetables; stir until warm.
