1 (14-ounce) can diced tomatoes

1 tbsp fresh thyme finely chopped

tsp fresh cilantro for garnish coarsely chopped
Recipe Method
1. Heat the oil in a
large sauté
pan over medium-high heat. Add the
chicken,
onion,
curry powder, and
garlic; cook, stirring occasionally, for 5 minutes or until the
chicken is thoroughly cooked and the onions are tender.
2. Stir in the remaining ingredients.
Reduce the heat to low; cover and
simmer for 5 minutes or until heated through.
3. Garnish the servings with
cilantro.
