Ginger Shrimp Skewers

Ingredients

  • 12 ounce-weight shrimp, 16 large fresh or frozen in shells
  • 1 tsp orange peel, finely grated
  • 3 tbsp orange juice
  • 1 tbsp vinegar, white wine
  • 1 tsp toasted sesame or olive oil
  • 1 tsp grated fresh ginger or 1/2 tsp. ground ginger
  • 1/8 tsp salt, table
  • 1/8 tsp spice, chili pepper, cayenne, dried, ground
  • 1 tsp garlic minced (one clove)
  • 2 cup pea pods (16 pods)
  • 1/2 cup mandarin orange sections (8 pieces)
  • 2 tbsp soy sauce, shoyu, low sodium

Recipe Method

1. Thaw shrimp, if frozen. Peel and devein shrimp, leaving tails intact (if desired). In a large saucepan cook shrimp in a large amount of boiling water for 1 to 3 minutes or until shrimp are opaque. Drain. Rinse shrimp with cold water; drain.

2. Place shrimp in a resealable plastic bag set in a shallow bowl. For marinade, in a small bowl combine orange peel, orange juice, vinegar, oil, ginger, salt, cayenne pepper, and garlic. Pour over the shrimp. Seal bag; turn to coat shrimp. Marinate in the refrigerator for at least 1 hour or up to 2 hours.

3. Place pea pods in a steamer basket over boiling water. Cover and steam for 2 to 3 minutes or just until tender. Rinse with cold water; drain.

4. Drain shrimp, dicarding marinade. Wrap each shrimp with a pea pod. On each of eight 6-inch skewers, thread 2 wrapped shrimp and 1 mandarin orange section. If desired, serve with soy sauce.

Makes 8 appetizers.
