Mediterranean Walnut Spread

To make ahead: Prepare spread as directed. Place in an airtight container and chill for up to 3 days.

Ingredients

  • 1 cup beans, garbanzo, cnd
  • 1/2 cup nuts, walnuts, english, dried, chpd
  • 2 ounce-weight basil leaves, fresh (1/2 C. lightly packed)
  • 1/2 cup water
  • 4 tsp lemon juice, raw
  • 1/4 tsp salt, table
  • 1/8 tsp spice, pepper, black, ground
  • 2 pita bread rounds, cut into wedges

Recipe Method

1. In a blender or food processor combine beans, walnuts, basil leaves, water, lemon juice, salt and pepper. Cover and blend or process until nearly smooth, scraping down side of container occasionally. If too thick, stir in additional water, 1 tablespoon at a time, to reach a spreading consistency.

2. Serve on pita wedges.
