  • 8 Large Potatoes
  • 1/2 tsp Salt
  • 2 tablespoons Margarine
  • 1/4 cup Milk
  • 3 tablespoons Olive Oil
  • 3 Cloves Garlic, minced
  • 1 Onion, chopped
  • 1 pound Extra Lean Ground Beef
  • 2 tablespoons Celery Salt
  • 1 Can of Corn Niblets
  • 2 cups Sliced Medium Cheddar Cheese

Recipe Method

1. Peel potatoes and chop into cubes, add salt and potatoes to a pot and fill with water to just cover the potatoes. Heat on high until water is boiling and reduce heat until potatoes are cooked approx 15-20 minutes. Once cooked strain potatoes and mash with margarine and milk and set aside.

2. In a large frying pan add olive oil and heat on medium high, when oil is hot add minced Garlic fry for 20-30 seconds, add chopped onion and fry for 1 minute. Add ground beef and celery salt and cook until the meat has browned and fully cooked. Drain water from the corn and add corn to the frying pan, fold into meat and reduce heat to medium and continue to cook for 5 minutes.

3. In a large casserole pan add meat mixture to the bottom and pat it flat so it evenly covers the bottom of the dish. Spoon mashed potatoes on top of the the meat and spread evenly over the meat. Cover the top of the potatoes with sliced cheddar cheese and bake for 5 minutes.
