  • 2 cups red bell pepper, chopped
  • 2 cups zucchini, chopped
  • 1 cup yellow or orange bell pepper, chopped
  • 1 cup seeded tomato, chopped
  • 1/3 cup red onion, chopped
  • 1/4 cup fresh flat-leaf parsley, minced
  • 2 tablespoons red wine vinegar
  • 1 tbsp extra-virgin olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 6 cups romaine lettuce, chopped

Recipe Method

Combine the first 10 ingredients in a large bowl; toss well. Cover and chill up to 1 hour. Arrange 1 cup lettuce on each of 6 small plates; top each serving with 2 cups bell pepper mixture. Serve immediately.
