1 1/4 cup flour, pastry, white, unbleached, enrich, stone ground
1 1/4 tsp buttermilk, prep f/pwd w/wtr
70 ml water
1 cup blueberries, fzn, sweetened
Recipe Method
1. Perheat the oven at 190C. Lightly grease a 12-hole muffin tin.Put butter and both sugar in a mixing bowl and cream it until smooth. And then add honey and vanilla, mix well.
2. Add eggs slowly, after that scrape the bottom of the bowl. And then combine all dry ingredients together. Add half of the dry ingredients into the mixture, add water and mix it for 1 minute. Add the remained flour into the mixture and stir well.
3. Dust little bit flour into the frozen blueberries. And then fold blueberries into the mixture. Pour mixture into the muffin tins and bake at 190C for 28 minutes, or until the muffins are firm.
TIP: After you fold in the blueberries, dont mix too long. Otherwise the mixture will become turn blue.
