  • 1 1/2 pounds 1-inch thick fresh or frozen salmon fillets or steaks
  • 1 tbsp orange zest, finely shredded
  • 1/4 cup orange juice
  • 2 tablespoons olive oil
  • 1 tbsp snipped fresh tarragon or 1/2 teaspoon dried crushed tarragon
  • 1 tsp fresh ginger, grated
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Orange wedges, for garnish (optional)

Recipe Method

1. Thaw salmon if frozen. Rinse salmon; pat dry with paper towels. Cut fillets into serving-size pieces.

2. In a 2-quart square baking dish, combine orange zest, orange juice, olive oil, tarragon, ginger, salt and pepper. Add fish; turn to coat with marinade. Cover and refrigerate 3 to 4 hours, turning fish occasionally. Do not marinate longer because this will toughen the salmon.

3. Preheat oven to 450 degrees. Bake salmon with marinade, uncovered, 8 to 12 minutes or until salmon flakes easily when tested with fork. Spoon marinade over fish. Serve with oranges wedges if desired.
