  • 2 pounds red new potatoes

Sauce:

  • 1/3 cup olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp rosemary, dried crumbled
  • Salt and pepper to taste

Recipe Method

1. Scrub potatoes; cut in 1-inch chunks. Place in 3-quart saucepan and add enough water to just cover potatoes. Cover saucepan and bring to a boil over high heat.

2. Reduce heat to low and simmer 10 minutes or until potatoes are slightly tender when pierced with a fork. Drain.

3. While potatoes are cooking, make the sauce. Place olive oil, Dijon mustard, rosemary, salt and pepper in small bowl; mix well.

4. Place cooked, drained potatoes in serving bowl. Add sauce. Gently mix until potatoes are coated. Serve hot.
