  • 1 1/2 cups heavy cream, chilled
  • 1/4 cup sugar
  • 1/4 tsp peppermint extract
  • 1 (9-ounce) package chocolate wafers
  • 1 cup miniature chocolate chips

Recipe Method

1. Line a serving platter with 2 sheets waxed paper.

2. With electric mixer, beat heavy cream, sugar and peppermint extract until stiff peaks form.

3. Spread each wafer with about 1/2 tablespoon of mint cream mixture. Lay each cookie on its side and form into a log.

4. Spread remaining mint cream mixture over the log; sprinkle chocolate chips over the mint cream. Refrigerate at least 4 hours.

5. Slice cake diagonally with a serrated knife.
