Recipe Method
1. Wash
eggplant and
zucchini; slice lengthwise and cut into 1/4-inch cubes. Peel
onion and
garlic; chop fine.
Dice sun-dried tomatoes.
2. Heat olive oil; saute onion, garlic, eggplant and zucchini. Add sun dried tomatoes and thyme. Simmer about 10 minutes until liquid has evaporated.
3. Preheat oven to 400 degrees. Toast bread in oven 5 minutes. Pit olives, chop fine and stir into vegetable mixture.
4. Spread mixture on bread slices. Garnish with basil leaves.
