  • 1 small eggplant
  • 1 small zucchini
  • 1 small onion
  • 2 cloves garlic
  • 3 sun-dried tomatoes in preserved oil
  • 4 tablespoons olive oil
  • 1 tsp thyme leaves
  • 12 thin slices French or Italian bread
  • 10 black olives
  • Basil leaves for garnish

Recipe Method

1. Wash eggplant and zucchini; slice lengthwise and cut into 1/4-inch cubes. Peel onion and garlic; chop fine. Dice sun-dried tomatoes.

2. Heat olive oil; saute onion, garlic, eggplant and zucchini. Add sun dried tomatoes and thyme. Simmer about 10 minutes until liquid has evaporated.

3. Preheat oven to 400 degrees. Toast bread in oven 5 minutes. Pit olives, chop fine and stir into vegetable mixture.

4. Spread mixture on bread slices. Garnish with basil leaves.
