Blueberrie Oatmeal Loaf

Ingredients

  • 9/10 cup flour, all purpose, bleached, enrich
  • 3/5 tsp baking powder
  • 1/5 tsp spice, cinnamon, ground
  • 4 egg whites, raw
  • 4 tbsp sugar
  • 1/4 cup oatmeal
  • 100 ml water
  • .35 cup sugar, brown
  • 80 ml oil, canola corn
  • 50 ml milk
  • 1 3/10 tbsp honey
  • 2 tsp lemon juice
  • 1/2 cup blueberry

Recipe Method

1. Preheat the oven to 180C. Grease and line a loaf tin with baking paper. Mix flour, baking powder and cinnamon powder together and sift it into a bowl, set aside.
2. Bring milk and brown sugar into a mixing bowl, stir it well. Add corn oil, mix until it comes thick.
3. Place water and oatmeal into a bowl, stir it well. And pour oatmeal into the sugar mixture. Mix until well combined. Add in sifted flour mixture, stirring with a whisk until smooth.
4. Bring egg white into a clean mixing bowl, whisk it until soft peak. Add sugar and continue whipping until stiff. Fold in stiff egg white into the batter, mix until all combined. Add honey and lemon juice, mix well.
5. Pour half batter into the loaf tin, place some blueberries on the batter. Add the remainder batter on it, finish the blueberries on the top. Bake at 180C for 25 minutes, or until a skewer comes out clean when inserted into the centre of the cake. Leave in the tin for at least 15 minutes before turning out onto a wire rack to cool.

TIP: You can use different kinds of fruit instead of blueberries.
