  • 2 cups flour
  • 3/4 cups milk
  • 2 teaspoons ginger
  • 1 cup molasses
  • 2 teaspoons baking soda
  • 1/2 cup butter
  • 2 eggs
  • 1/2 cup brown sugar

For Sauce:

  • 1/2 cup butter
  • 1 cup whipping cream
  • 1 cup brown sugar

Recipe Method

For Cake:

1. Mix flour, baking soda and ginger in mixing bowl. 2. Put butter, molasses and brown sugar in saucepan and heat until melted. 3. Stir milk, eggs and melted mixture into flour mixture and mix well. 4. Pour into greased 9" x 13" cake pan and bake at 325 degrees for approximately. 50 minutes or until cake-tester comes out clean. 5. Remove from oven and let cool at room temperature for 20 minutes.

To make into pudding:

1. Cut baked gingerbread into cubes and mix with 3 eggs, 1 cup milk and 1/2 cup sugar and return to pan. Bake at 300 degrees for 30 minutes or until a knife inserted into egg mixture comes out clean. Serve warm with caramel sauce (below), whipping cream or your favorite ice cream.

For Sauce:

1. Gently melt butter in large saucepan. 2. Once melted, add brown sugar & mix well (until mixture peels away from side of the pan). 3. While heating, slowly add whipping cream and continue to mix. 4. Once sauce has absorbed cream, remove from heat, cool and store in an airtight container in refrigerator.

Serve with gingerbread (above) or over your favorite ice cream.
