An easy muffin to make at home.

Ingredients

  • 1.45 cup bran
  • 1 cup honey, light
  • 3 eggs, whole
  • 780 ml water, cold
  • 210 ml oil, vegetable
  • 3/4 cup pineapple, crushed
  • 1 3/4 cup flour, pastry, white, unbleached, enrich, stone ground
  • 10 tsp buttermilk powder
  • 5 tsp baking soda
  • 2 tsp salt, table
  • 1 1/4 cup sugar, brown
  • 1 cup raisins

Recipe Method

1. Preheat the oven to hot 205C. Lightly grease 3 12-hole , 1-cup muffin tins. Place all the ingredients in a big mixing bowl. Using a electric beaters mix it for 4 minutes on low speed. And mix for 1 minute on medium speed.
2. Deposit mixture into pails and store in refrigerator for 10 minutes. Take out the cool mixture, before dropping mix into paper-lined muffin tins, stir the muffin mix thoroughly.
3. Bake muffins at 205C for 20 minutes or until they have a spring to the touch. Cool muffins for 10 minutes, remove from muffin tins and serve.
