1 sheet frozen puff pastry dough
for the onions:

3 large sweet or yellow onions, sliced thin

1 tbsp sugar

1 tsp kosher salt

1 tsp herbs de Provence or Italian seasoning blend

2 tablespoons olive oil
-
1 tbsp butter
-
1/4 cup parmigiano-reggiano (optional) grated
Recipe Method
1. Preheat the oven to 400
Fahrenheit. Thaw the
puff pastry for 30 - 40 minutes, until its easily handled. Meanwhile, caramelize the onions in a large skillet over low heat by adding all ingredients to the pan and stirring occasionally for 45 - 60 minutes, until they have developed a beautiful golden brown color. Remember not to overcook, or cook over too high heat. The onion can be made ahead of time and stored in the fridge until you are ready to place tart in oven.
2. Place the unfolded puff pastry on a baking sheet lined with parchment paper or a silicone baking mat, and spread with the onion mixture, topping with the cheese if using. Prick the tart every few inches with a fork, and use the fork to make the edges decorative, if desired. Place in oven for 20 - 25 minutes, cool for 5 minutes on a wire rack, slice into squares, and serve.
