  • 1 pound carrots, peeled and chopped
  • 1 small gingeroot, minced
  • 4 tablespoons olive oil
  • 1/4 tsp cayenne
  • 2/3 cup grapes

Recipe Method

1. Toss chopped carrots with ginger in the olive oil.

2. Season with cayenne, salt and pepper.

3. Roast at 350 for 90 minutes.

4. Mash carrots and top with halved grapes.
