  • 12 cloves garlic, peeled and minced
  • 4 egg yolks, at room temperature
  • 1 cup olive oil
  • 1/2 cup salad oil
  • Salt and pepper
  • 1 tbsp lemon juice (fresh) (or more)

Recipe Method

1. Crush garlic in blender. Put egg yolks in blender and process. Add lemon juice, mix, oils. Add oils very slowly to blender while processing. When it becomes very thick the remaining oils may be added more quickly.

2. Season with salt and pepper to taste.

3. Use as potato salad dressing, bread spread or dressing for fish and vegetables.
