Ingredients

  • 2 cup sugar
  • 4 eggs, whole
  • 1 tsp vanilla extract
  • 1 1/2 cup oil, vegetable
  • 2 cup flour, all purpose, bleached, enrich
  • 1/2 tsp baking soda
  • 1/4 tsp salt, table
  • 1 tsp spice, cinnamon, ground
  • 2 tsp baking powder, continuous action
  • 1 1/2 cup carrots, fresh, grated grated
  • 2 apples, fresh, med, 2 3/4" chopped
  • 1 cup nuts, walnuts, black, dried, chpd chopped

Recipe Method

Combine sugar, eggs, vanilla, and oil. Sift together dry ingredients and stir into liquid mixture. Add carrots, apples and nuts. Pour batter into 9 x 13-inch pan and bake in 325~ oven for 60 to 70 minutes.
