Cheese Filling

1 1/4 cup cream cheese

1/4 cup sugar

125 ml cream, whipping, 35% b.f.

1 egg yolks, raw

3 egg whites, raw

2 tsp instant coffee powder
-
1 tbsp hot water
-
1 tbsp cornstarch

1/4 tsp vanilla extract
Topping

80 ml cream, whipping, 35% b.f.

1 tsp sugar
-
1/4 tsp vanilla extract
-
4 tsp cocoa powder, alicante, 10-12%

1/4 tsp spice, cinnamon, ground
Recipe Method
Cheese Filling
Preheat the oven to 180C. First
whisk the
whipping cream until soft form and
set aside. Put
sugar and
cream cheese into a mixing bowl cream it until smooth and soft. Add egg and mix well. Pour in coffee liquid and fold well. And then add vanilla and corn starch and fold well. After that pour in whipped cream to the cheese mixture and mix well. Use a pipping bag and pipe the mixture into the glasses. Bake at 180C for 35 minutes. Let it cool down.
Topping
Whisk whipping cream with sugar together until stiff form. Use a big spoon and spread cream evenly on the cheese glasses. And then sift chocolate powder and cinnamon powder on top prior to serving.
