Zest of 1/2 orange, grated

2 teaspoons toasted and ground cumin seeds

2 tablespoons fresh chives, chopped

1/2 cup pine nuts, toasted

1/2 cup fresh pomelo juice (or substitute pink grapefruit juice)

Salt and freshly ground pepper, to taste
Recipe Method
1. Bring the
stock to a boil and remove from the heat. Stir in the
couscous,
orange,
pomelo zest, and
ginger. Let stand, covered, for 5 minutes.
2. Stir in the cumin, olive oil, chives, mint, pine nuts and pomelo juice and gently fluff together. Season with salt and pepper.
