  • 1/4 cup fresh mint, chopped
  • 1 tbsp balsamic vinegar
  • 2 teaspoons ground cumin
  • 1 tsp dry mustard
  • 2 teaspoons honey
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 8 (4-ounce) lamb loin chops (about 1-inch thick), trimmed
  • Cooking spray

Recipe Method

1. Combine the first 7 ingredients in a small bowl, stirring well. Place lamb in a single layer in a shallow dish, and rub spice mixture evenly over both sides of lamb. Cover and refrigerate 4 hours.

2. Prepare grill or broiler.

3. Place lamb on a grill rack or broiler pan coated with cooking spray. Grill 4 minutes on each side or until desired degree of doneness.
