Carrot Cake Loaf

Ingredients

  • 3/10 cup dry raisins
  • 2 eggs, whole
  • 1 1/4 cup sugar
  • 1 tsp vanilla extract
  • 170 ml oil, vegetable
  • 1 cup flour, all purpose, bleached, enrich
  • 1 1/5 tsp baking soda
  • 1 1/5 tbsp spice, cinnamon, ground
  • 1/4 tsp spice, allspice, ground
  • 1/4 tsp spice, nutmeg, ground
  • 1/4 cup carrots, thin strips
  • 1/2 cup pineapple crushed

Recipe Method

1. Preheat the oven to 325F. Grrease a loaf tin and line the base and sides with baking paper.
2. Bring eggs and sugar in a large bowl, beat with electric beaters until the mixture is light and smooth. Add oil slowly and continue mixing.
3. Add the flour, baking soda and all the spices. And beat until the mixture is smooth. Add the raisin, carrots and pineapple, Using a metal spoon stir well.
4. Pour the mixture into the loaf tin and bake for 60 minutes, or until a skewer comes out clean when inserted into the centre of the cake. Leave for at least 20 minutes before turning out onto a wire rack to cool.
