Blender Coconut Pie

Ingredients

  • 1 3/4 cup milk, evaporated
  • 3 eggs, whole
  • 1 cup sugar
  • 1 cup coconut flaked
  • 3 tbsp oil, vegetable
  • 3 tbsp flour, all purpose, bleached, enrich
  • 1/2 tsp vanilla extract
  • 1/2 tsp spice, nutmeg, ground

Recipe Method

Ground nutmeg Combine all ingredients except nutmeg in container of electric blender. Process mixture until well blended. Pour into a greased and floured 10-inch pie plate (mixture will be thin). Sprinkle top of mixture with nutmeg; bake at 325^ for 40 minutes or until pie is set. Let pie stand 10 minutes before serving.
