Ingredients

  • 2 tbsp flour, all purpose, bleached, enrich
  • 4 ounce-weight beef, average of all cuts, ckd, 1/4" trim cubed
  • 2 tsp oil, canola
  • 1 1/2 cup tomatoes, diced, cnd undrained
  • 1 cup tomato sauce, unsalted
  • 2 tsp herb, oregano, fresh, intl
  • 1 tsp cajun or blackened steak seasoning *
  • 1/4 tsp salt, table
  • 2 cup bell pepper cut into strips
  • 1 onion sliced and separated into rings
  • 2 cup rice, brown, long grain, ckd

Recipe Method

1. Place the flour in a shallow dish. Dip steaks into flour, coating both sides. In a large skillet heat oil over medium heat. Cook meat, half at a time, in hot oil until brown, turning once (add additional oil if necessary).

2. Add undrained tomatoes, tomato sauce, oegano, Cajun seasoning and salt to meat in the skillet. Bring to boil, reduce heat. Cover and simmer for 25 minutes, stirring occasionally. Add sweet peppers and onion. Cover and simmer for 5 to 7 minutes more, or until meat and vegetables are tender. Skim fat from juices. Serve with rice.

*NOTE: To make your own blackened seasoning, in a small bowl combine 1/2 tsp. onion powder; 1/2 tsp. garlic powder; 1/2 tsp. white pepper; 1/2 tsp. cayenne pepper; 1/2 tsp. black pepper; 1/2 tsp.; 1/2 tsp. dried thyme, crushed; 1/8 tsp. salt. Store, tightly sealed, in a cool place for up to 6 months. Makes 1 tablespoon.
