Chili-Glazed Pork Roast

This roast can be prepared up to 24 hours ahead before roasting.

Ingredients

  • 1 tbsp sugar, brown, packed
  • 1 tbsp thyme, fresh
  • 1 tsp chili powder
  • 1 tsp rosemary, fresh
  • 1/8 tsp pepper, red or cayenne
  • 2 1/2 pound pork, roast, top loin, raw

Recipe Method

1. In a small bowl combine brown sugar, thyme, chili powder, rosemary and cayenne pepper. Sprinkle brown sugar mixture evenly over roast; rub in with fingers.

2. Place roast on a rack in a shallow roasting pan. Insert an oven-going meat thermometer into centre of roast. Roast in a 325 F. oven for 1 1/4 to 1 1/2 hours or until thermometer registers 155 F. Cover with foil and let stand for 15 minutes before carving. The temperature of the meat after standing should be 160 F.
