  • 1 cup fresh pineapple, chopped
  • 4 tablespoons brown sugar
  • 4 tablespoons butter
  • 2 teaspoons fresh ginger, minced
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 1 splash brandy

Recipe Method

1. Add all ingredients to a medium heavy pan.

2. Simmer on medium heat, stirring occasionally for 30 minutes.
