1. Preheat the oven to moderate 180C. Grease a 9 x 5 x 3 inch loaf tin and line the base with baking paper. Using electric beaters, beat the butter and sugar in a small mixing bowl until light and creamy.
2. Add the eggs gradually, beating thoroughly after each addition. Add diced cheddar cheese and mix till well combined.
3. Lastly add milk, flour and baking powder and mix till well incorporated.
4. Spoon into the tin and smooth the surface. Bake for 45 minutes, or until a skewer comes out clean when inserted into the centre of the cake.
5. Leave the cake in the tin for 10-15 minutes before turning out onto a wire rack.
Sprinkle extra grated cheddar cheese on top of the cake to give a better appearance and fragrance when it bakes.
