Ingredients

  • 2 1/2 cup flour, all purpose, bleached, enrich
  • 1/2 tsp baking soda
  • 1/4 tsp salt, table
  • 3/4 cup sugar, brown
  • 1/2 cup sugar
  • 1/2 cup margarine, soft
  • 3 egg whites, raw
  • 2 tbsp honey, light
  • 1 tsp vanilla extract
  • 1 tsp flavor, almond extract
  • 1 cup baking chips, butterscotch
  • 1 cup baking chips, chocolate morsels, semi sweet

Recipe Method

Preheat oven to 300. Mix together flour, soda, and salt and set aside. In a large bowl, blend brown and white sugars. Add margarine and mix with electric mixer. In a small bowl, beat egg whites until fluffy. Add egg whites, honey, vanilla and almond extracts to sugar mixture. Beat until smooth. Scrape down sides of bowl. Add flour mixture, butterscotch, and chocolate chips and mix on low speed just until combined. Do not overmix. Drop by rounded tablespoon. Onto ungreased cookie sheets about 2 inches apart. Bake 18-20 minutes until lightly browned. Transfer to cool flat surface.
