This is a great recipe for using up left over rice. This is an adaption of the popular garlic rice of the hawker stalls in the Philippines. The addition of fried garlic chips at the end gives the dish a wonderful texture and flavour.

3 tablespoons vegetable oil

3 cloves garlic, minced

1/2 med onion coarsely chopped

1/2 pound asparagus rinsed and cut into 1/2-inch pieces

3 cups white rice cooked (best made the day before)

1 tbsp soy sauce

1/2 tsp salt

1 tbsp oyster sauce

3 green onions, finely chopped

Fried garlic chips (available at Asian markets)
Recipe Method
1. Heat the oil in a
large non stick
wok over high heat.
2. When hot, add the garlic and onion and stir fry for 30 seconds. Add the asparagus and stir fry for 1 to 2 minutes or until crisp tender.
3. Add the rice and toss frequently until hot, about 1 to 2 minutes. Add the soy sauce, salt and oyster sauce and mix well.
4. Before serving, toss in green onions and mix well. Serve and garnish with garlic chips.
