Caramel Apple Cake

Ingredients

CAKE
  • 1 1/2 cup oil, vegetable
  • 1 1/2 cup sugar
  • 1/2 cup sugar, brown
  • 3 eggs, whole
  • 3 cup flour, all purpose, bleached, enrich
  • 2 tsp spice, cinnamon, ground
  • 1/2 tsp spice, nutmeg, ground
  • 1 tsp baking soda
  • 1/2 tsp salt, table
  • 5 apples, fresh, med, 2 3/4", diced, peeled
  • 1 cup walnuts, chopped
  • 2 tsp vanilla extract
CARAMEL ICING
  • 1/2 cup sugar, brown
  • 3/10 cup cream, light
  • 1/4 cup butter, unsalted
  • 1/8 tsp salt, table
  • 1 cup confectioner's sugar

Recipe Method

In mixing bowl, combine oil and sugar. Add eggs, one at a time, beating well after each addition., Combine dry ingredients; add to batter and stir well. Fold in apples, walnuts and vanilla. Pour into a greased and floured 10 inch tube pan. Bake at 325 for 1 - 1/2 hours or until cake test done. Cool in pan 10 minutes; remove to a wire rack to cool completely. In the top a double boiler over simmering water, heat brown sugar, cream, butter and salt until sugar is dissolved. Cool to room temperature. Beat in confectioners sugar until smooth; drizzle over cake. Sprinkle with nuts if desired.
