1 pound large tiger prawns deveined, peeled, with tails left intact

1 yellow bell pepper cut into large chunks

1 green bell pepper cut into large chunks

1 red bell pepper cut into large chunks

1 cup bottom mushrooms

1 cup shiitake mushrooms
Recipe Method
1. Prepare a hot fire in a charcoal grill or preheat a gas grill to medium-high heat.
2. Strip off leaves from rosemary twigs, leaving some at the ends. Soak in water for at least 15 minutes.
3. Using a whisk, mix lemon juice and olive oil in a small bowl until well combined. Add 1 tablespoon fresh oregano. Stir. Set aside.
4. Season prawns with salt and pepper. Pour lemon juice and olive oil mixture and marinate prawns for about 10 to 12 minutes.
5. In a large bowl, combine the bell peppers and mushrooms. Season with salt and pepper.
6.Drizzle with 1 tablespoon olive oil and sprinkle 1 tablespoon minced oregano. Toss.
7. Thread prawns alternately with bell peppers and mushrooms into each rosemary twig.
8. Place the skewers on the grill rack and cook for 2 to 3 minutes on each side.
